For most Caribbean and Mexico all-inclusives, 4 to 6 months out gives you the best selection. Cruises, holiday weeks, and Valentine's or anniversary-heavy dates fill up further out, so 8 to 12 months is safer. Last-minute is possible; the resort choice just narrows.
